Hotchkiss Holdings traces its roots back to 1984, when Lee and Kathy Hotchkiss brought the first Little Caesars to San Antonio. What began as a single pioneering move in the market grew into a substantial family operating business over the decades that followed.
Alongside their two sons, Jason and John Hotchkiss, the family built that platform into a 45-store operation. That experience shaped a hands-on approach to development, leadership, and restaurant operations that still defines the company today.

In 2022, Paul Gorman joined Jason and John Hotchkiss and the team began building with Dave's Hot Chicken. Together, they set out to create a platform that could pair disciplined operations with smart, market-by-market expansion.
Today, Hotchkiss Holdings is focused on becoming the premier operator in the Dave's Hot Chicken system by building restaurants that guests love, teams are proud to work in, and communities are excited to support.
